1  skinless chicken breast, diced
1  pear, cored and diced
1  sweet potato, peeled and diced
120 grams courgette, finely chopped
250 ml low salt vegetable stock, or chicken stock

Instructions

STEP 1/5

Place the stock in a small pot and bring to boil.

STEP 2/5

Add the chicken, reduce the heat and simmer for 20 mins.

STEP 3/5

Add the sweet potato and pear and simmer for another 10 mins.

STEP 4/5

Add the courgette and simmer for 5 more mins, until all ingredients are cooked and tender.

STEP 5/5

Purée in the pot using your MultiQuick 1 hand blender.
