Ingredients

Makes: 2

2  bread slices, fresh
0.5  cucumber, or 2 mini cucumbers
1 handful of micro greens, e.g. cress, radishes, etc.
  salt
  pepper
  olive oil
250 grams white beans, cooked, for the puree
2  lemon juice, for the puree
1  garlic clove, for the puree
2  olive oil, for the puree
  salt, for the puree
  pepper, for the puree

Instructions

STEP 1/4

Put all ingredients for the bean puree in the measuring cup and puree with Braun’s MultiQuick 9 hand blender shaft. Season to taste with salt and pepper.

STEP 2/4

Slice the cucumber with the food processor attachment using the thick slicing insert.

STEP 3/4

Toast the bread in either toaster or grill pan.

STEP 4/4

Spread bean puree on toasted bread and top with cucumber slices. Spread micro greens over the bread and season with salt and pepper. Finish with a little olive oil, if desired.
