Ergibt:

1  onion
1 clove garlic
1 medium potato
2 tbsp. olive oil
500 ml vegetable stock
400 grams courgette
150 ml cream
20 grams Parmesan
  salt
  pepper


Anweisungen

SCHRITT 1/7

Chop the parmesan with Braun’s MultiQuick 9 350ml chopper attachment and transfer into a bowl.

SCHRITT 2/7

Peel the onion and garlic and chop in the food processor attachment using the chopping tool as well and transfer into a bowl.

SCHRITT 3/7

Peel the potato and grate it coarsely with the food processor attachment using the coarse shredding insert.

SCHRITT 4/7

In the meantime, dice the courgettes with the food processor attachment using the dicing insert.

SCHRITT 5/7

Heat the olive oil in a saucepan, sauté the diced onion, garlic and potato flakes until colourless. Deglaze with vegetable stock, bring to the boil and cook, covered, over a medium heat for about 5 minutes.

SCHRITT 6/7

Add the courgette cubes to the soup and simmer for another 5 minutes.

SCHRITT 7/7

Remove the soup from the heat, add cream and parmesan and purée finely with the hand blender. Season with salt and pepper and serve.


A tomato pesto made from dried tomatoes, garlic, basil, pine nuts, olive oil and Parmesan is a great accompaniment.
